Eggplant Parmesan

Recipe :

 

  • 1 large eggplant
  • ½ cup oil
  • 1 ½ cups tomato sauce(recipe available on site)
  • 2 cups fine bread crumbs
  • 2 Tbls minced fresh parsley
  • ½ cup grated parmesan cheese
  • 1/3 lb mozzarella cheese cut into thin slices

 

Cut eggplant into 1/3” slices. Place in baking dish. Cover with boiling water and let stand 5 minutes. Drain well on paper towels. Heat 2 Tbls oil in large skillet. Brush eggplant with remaining oil and sauté them a few at a time until all are lightly browned on each side. Line baking dish with 2 layers of foil. Arrange half the eggplant slices in bottom of pan, sprinkle with half each of bread crumbs, parsley, and parmesan cheese. Top with half the tomato sauce and mozzarella slices. Repeat procedure using the remaining ingredients in the order mentioned above. Bake in a 350 degree oven for 45 min. or until sizzling hot. Can be frozen for later use.
