Cherries are an early spring introduction to stone fruit season. There are hundreds of varieties of cherries, ranging from deep red Bing, to the yellow-fleshed Royal Rainer.

Storage

Store your cherries with stems attached, unwashed, in a plastic bag in the refrigerator, or wrapped in a kitchen towel in the crisper drawer of the fridge. Wait to wash and pit the cherries until you’re ready to use them.

Cherries freeze well. If you plan to use your cherries within a month to two weeks, it’s fine to leave the pit in and freeze them whole. If you won’t be using the fruit until much later, pit the cherries first so the pit will not affect the flavor in the freezer.
