Fresh, supple, and uncured new garlic comes to you as a bulb and stalk. Use all of it!
The stalk portion of the garlic can be used as you would a leek. The layers of skin that encloses the baby cloves can be peeled off and sliced to be used as an onion. Remove the membrane from the individual cloves, then slice or chop cloves and use their delicate spring-season flavor to enrich your dishes.
The membranes can be lightly simmered, drained, cooled, and blended with 1/2 part olive oil and salt to taste for a garlicky spread.
This fresh garlic hasn’t been cured and should be stored in the refrigerator. Use it within a week, and within a few days once the bulb is opened.
