Green onions, also known as scallions, are milder and fresher than mature bulb onions.
Use green onions in salsas, salads, and other fresh preparations as well as in quiches, stir-fries, and as a substitute for a bulb onion or leek.
All parts of the plant are edible.
Store green onions in a plastic bag in the fridge and be sure to keep them dry. They should last about two weeks.
