Kitchen Basics: Constructing the Perfect Salad

The beauty of the Abundant Harvest weekly produce box is variety and freshness. A seasoned AHO subscriber learns to be skilled in the ways of spontaneity, ready for whatever produce Uncle Vern and the AHO farmers have prepared for them each week.


Our job here as the AHO Kitchen Team is to help you perfect those skills and give you the tools you need to enjoy the produce to its fullest. So let’s tackle the formula for the perfect salad. We were inspired by this formula provided by Jamie Oliver for the perfect mixed salad. 

A quick summary of the formula:

Greens (Something soft, something crunchy) + herbs + veggies and fruit + cheese/toppings + dressing


Here are some suggestions for you to try using AHO produce and some of our favorite salad dressing recipes!

Dressing: Basil Green Goddess Dressing

Greens: Red Leaf Lettuce, Sorrel, Arugula, Spinach

Fruit/Veg: Zucchini, Onions, Tomatoes, Sweet Peppers

Herbs: Basil, Marjoram, Oregano

Cheese/Toppings: Mozzarella, Parmesan, or Pecorino Romano, Garlic Croutons, Pine Nuts

Dressing: Apricot Vinaigrette (can sub in any type of stonefruit)

Greens: Red Leaf Lettuce, Dandelion Greens, Arugula

Herbs: Thyme, Lavender, Mint

Fruit/Veg: Fresh Apricots, Peaches, Nectarines, Plums

Cheese/Toppings: Candied Walnuts/Pecans, Freeze Dried Apples/Grapes, Blue Cheese Crumbles

Dressing: Pomegranate Vinaigrette

Greens: Red Leaf Lettuce, Arugula, Spinach

Herbs: Fennel

Fruit/Veg: Pears, Asian Pears, Green Apples, Persimmons

Cheese/Toppings: Pomegranate Seeds, Toasted Quinoa, Pistachios

Dressing: Lemon Vinaigrette

Greens: Kale, Red Leaf Lettuce, Butter Lettuce

Herbs: Garlic, Green Garlic, Rosemary, Oregano

Fruit/Veg: Avocado, Cherry Tomatoes, Cucumber

Cheese/Toppings: Almonds, Feta Cheese, Garbanzo Beans
