If summer had a fruit mascot it would surely be the watermelon – from seed spitting contests to the perfect poolside snack – the rosy melon by name alone conjures up the feeling of fun and refreshment! watermelons are also the perfect ingredient for fun, fresh, summertime drinks. Here is a simple slushie recipe that is easy, sugar-free, and just right for those hot summer days. Kids and adults will love it.
- 1 medium watermelon
Scoop out the flesh of one medium sized watermelon into the blender and set the rind aside. Be sure to remove any of the larger seeds but don’t worry about removing the smaller ones (they won’t end up in the drink)
Blend until smooth and pour the mixture through a fine mesh strainer into a bowl. Use a potato masher to help press out all the juice from the pulp.
Toss out the watermelon pulp and pour the clear liquid into a 9 x 13 baking pan. Place the pan in the freezer for a minimum 4 hrs or overnight.
When frozen, remove the pan from freezer and scrape with fork. Serve in the watermelon rind for a fun presentation! Add a splash or lemon or lime to give the slushie more of a tropical twist!
