General Info

Potatoes are in the nightshade family with tomatoes, eggplant, and peppers. There are over 100 varieties of edible potatoes, ranging from purple, to red, to yellow, to white.

Potatoes are a good source of potassium, vitamin C, and vitamin B6. Most of the vitamins and minerals they contain are located right beneath the skin, so eating them with the skin on gives you the most nutrition.

Serving Suggestions

Potatoes can be used in all sorts of recipes, mashed, roasted, sauteed, steamed, they can add a heartiness to all types of meals.

The best use for each potato depends on its level of starch and maturity, though potatoes can generally be substituted successfully.

Storage

These organic potatoes are alive! Keep them stored in a cool, dark place to reduce sprouting. The fridge is ok for short term storage if you don’t have a cool spot in your home. If your potatoes do begin to sprout, just cut those parts out and go ahead and use them.

They should last a month at room temperature in a dark spot.

Tips

A trick for telling whether or not a potato is better for boiling or baking is to look at your knife after cutting into the raw potato. If there is white residue left on your knife, the potato is better for baking, if the knife is clean it’s a boiling potato.
