Tomato and Oregano Pasta Sauce

Ingredients:

  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lb hamburger or sausage
  • 1 medium onion, chopped
  • 2 lbs tomatoes, peeled and diced
  • ½ cup red wine
  • 6 oz can tomato paste
  • 1 tsp sugar
  • 3 tbsp fresh oregano, minced

Instructions:

Heat olive oil in large saucepan over medium heat. Add garlic and stir. Add sausage or hamburger.  Break up meat with a spoon and cook until lightly browned.  Add onions and tomatoes and cook for approximately 5 minutes.  Mix in wine, tomato paste and sugar.  Reduce heat and simmer for about 20 minutes, stirring frequently.  Stir in oregano and remove from heat.

Sweet Potato and Apple Casserole

Ingredients:
  • 3 sweet potatoes, peeled & quartered
  • ½ cup firmly packed brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 2 large apples, peeled, cored and cut into ¼ inch rings
  • Topping:
  • ¼ cup flour
  • ¼ cup firmly packed brown sugar
  • ¼ cup butter
  • ¼ cup chopped pecans
 Instructions:

Preheat Oven to 350º. Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 min, or until tender but firm. Drain, cool and cut into ¼ inch slices. Lightly grease 8 x 11 inch baking dish. In a small bowl, mix brown sugar, cinnamon & nutmeg. Layer sweet potatoes, brown sugar mixture and apples in prepared baking dish. In a medium bowl mix topping ingredients and sprinkle over apples. Bake in oven for 30 min or until lightly browned.


 

Putting it All Together

Rustic Winter Vegetable Tarts

Ingredients:

  • 7 ½ cups of winter vegetables
    (such as Brussels Sprouts, Carrots, Turnips, Red Onion, Sweet Potatoes, Rutabagas, Leeks, Butternut Squash)
  • 4 slices of bacon
  • 3 Tbsp olive oil
  • 2 Tbsp thyme
  • 1 pkg refrigerated (15 oz) unbaked pie crust, or make your own
  • 1 cup crumbled goat cheese (4 oz)
  • 1 Tbsp balsamic vinegar
  • 4 cloves garlic, minced
  • Rosemary (optional)

Instructions:

Peel and seed your vegetables as necessary and cut into bite size chunks. Toss prepared vegetables with bacon, olive oil, thyme and salt and pepper to taste. Spread evenly on 15 x 10 x 1 baking pan. Roast vegetables at 425º for about 35 minutes. Roll out each pie crust and divide into four individual squares. Remove vegetables from oven and stir in ¾ cup of the goat cheese, the vinegar and garlic. Set aside. Divide vegetable mixture among dough squares leaving enough of a border to form edge for tart. Sprinkle veges with remaining goat cheese. Bake 20 minutes at 375º or until tarts are golden brown.


 

Quick and Easy

Crispy Kale Chips

Ingredients:

  • 1 head kale, washed and thoroughly dried
  • 2 tbsp olive oil
  • sea salt for sprinkling

Instructions:

Preheat oven to 275°. Remove the ribs from the kale leaves and cut the greens into 1½ inch pieces. Lay on a baking sheet and toss with the olive oil and salt. Bake until crisp, about 20 minutes, turning the leaves half way through baking time.


Vegetarian

Kale, Apple, Avocado Smoothie

Ingredients:

  • Approx 1 Cup of Kale, chopped
  • 1/2 a Ripe Avocado, sliced into chunks
  • 1/2 an Apple
  • 3/4 Cup of Vanilla Almond Milk
  • 2 Tbsp of Raw Honey
  • 1/4 Cup of Ice

Instructions:

Combine Kale, Apple, and Avocado on the bottom of the blender. Drizzle in Honey. Pour in Milk. Top with Ice. Blend and Enjoy. Makes One 12 oz serving.


 

Something for the Sweet Tooth

Orange Cake

Ingredients:
  • 2 c flour
  • 3 eggs beaten
  • ½ tsp salt
  • 1 ½ tsp grated orange zest
  • 3 tsp baking powder
  • 1 ½ c sugar
  • ½ c milk
  • ½ c orange juice
  • ½ c oil
 Instructions:
Preheat oven to 350F. Grease and flour loaf pan or muffin tin. In small bowl combine all wet ingredients and set aside. In a large bowl sift together all dry ingredients except sugar. When sifted add the sugar combine. Make a well in center of dry ingredients and pour wet mixture in well. Stir until thoroughly combines. Place batter in prepared loaf pan and bake in oven for 35 min. If making muffins bake for 20-25 minutes. Allow to cool. Sprinkle with powdered sugar if desired.
