Cornbread made with Fresh Corn

  • 1c flour
  • 1 c yellow cornmeal
  • 1 c fresh corn
  • 1 tbsp baking powder
  • 2 eggs,beaten
  • ½ c melted butter
  • 1 c half and half
  • ½ tsp salt
  • ½ c sugar (optional)


Preheat oven to 400. Thoroughly grease an 8×8 baking dish. Sift together the dry ingredients.

Combine the half and half, eggs, butter and sugar.

Add the liquid ingredients to the dry ingredients and mix just until the flour is moistened. Then fold in the corn . Do not overmix.

Pour the batter into the prepared pan and bake the cornbread immediately. Bake 25-30 min.
