Raw Kale Salad

  • 1 bunch kale
  • 1 Tbsp olive oil
  • ¼ tsp sea salt
  • 1 lime or lemon, juiced
  • 1 tsp balsamic vinegar
  • 1 Tbsp red onion, finely chopped
  • 1 orange, peeled and sliced
  • 1 peach, peeled and sliced
  • 1 pomegranate, seeded
  • 1 cup Grapes sliced in half

Instructions: Chop the kale into thin ribbons. Drizzle the kale with olive oil and sprinkle with salt.  Massage the kale with your hands to soften it, and then allow to sit for 5-10 minutes.  Add the lime or lemon juice, vinegar, onion and fruit of choice.  Allow to sit for 10 minutes and serve.
