Strawberry Lemonade Bars

Crust and Crumble Topping

  • 1 ½ c flour
  • ½ c melted butter
  • ½ c granulated sugar
  • ¼ c light brown sugar, packed
  • pinch of salt

Lemon Filling Layer

  • 1 large egg
  • ½ c plain or vanilla Greek yogurt
  • 1/3 c granulated sugar
  • 2 tbsp lemon juice
  • 2 tsp vanilla extract
  • ¼ c flour

Strawberry Filling Layer

  • 2 heaping c diced strawberries
  • 1/3 c granulated sugar
  • 2 tbsp lemon juice
  • 2 tsp lemon zest
  • 2 tsp cornstarch


Preheat oven to 350F. Prepare 8 inch pan with cooking spray. In a large bowl melt butter for crust. Add the sugar, flour, salt. Stir to combine. Mixture will be dry and crumbly. Set ¾ c crumble aside for the topping. Place remaining mixture in pan and press into bottom of pan with fingers.

In a medium bowl, place egg, yogurt, sugar, lemon juice, vanilla and beat to combine.Whisk in the flour.

Evenly pour filling over the crust and jiggle an to help distribute.

In a medium bowl add all strawberry filling ingredients. If the mixture appears to be a bit to thin you may need to add a tbsp or two of flour. Place this mixture over the filling layer. Evenly sprinkle with reserved ¾ c crumble mixture. Bake for 60-75 min or until edges bubble and light golden brown. Cool and slice.
