Thyme is an aromatic herb in the mint family. It is one of the principle ingredients in herbes de Provence.
The flavor of thyme is a complex combination of sweet and savory. In the kitchen, it can be treated as a fix-all. It’s pungent flavor works well with most veggies and it is balanced enough to compliment meats, poultry, eggs, cheese, olives, fish, rice, grains, pasta, and rich buttery dishes.
It pairs well with parsley and bay leaves and makes a good marinade with rosemary and sage.
